Dried flowers are blooms that have had their moisture removed, so that their shape and colour last a long time. Fresh flowers are living flowers that still drink water. They start from the same blossom, but they treat time in quite different ways.
A fresh flower drinks through its stem and opens, then slowly fades once it is in full bloom. Its scent, its touch and the soft grain of its petals are felt most vividly within that short span. So in front of fresh flowers, we naturally find ourselves thinking about today.
A dried flower is a flower that time has been held in. The colour fades a little and the texture turns crisp, but the shape stays, letting the memory of the day you received it sit on your desk or wall for a long while. In return, much of the fresh flower's dewy liveliness and fragrance is lost.
The two also differ in how they are looked after. Fresh flowers need attention to water and temperature, whereas dried flowers need little more than keeping away from damp and direct sunlight. The effort of caring for a flower can even change the feeling we bring to it.

Flowers that carry your feelings on a set day and at a set place, such as for celebrations and funerals, generally lean towards fresh flowers. Their role is to arrive there on that day and keep people company. By contrast, flowers you want close at hand for a long time, such as an anniversary gift or home decoration, suit dried flowers well.
You can also use both. Give a bouquet of fresh flowers, then a few days later dry a few that are in good condition and keep them as a small decoration, and the memory of that day carries on a little longer. A potted plant lets you watch the whole cycle of blooming and fading over a long time, so it is a lovely thing to keep on occasions such as a shop opening or a house move.
Change the vase water often, and each time trim a little off the end of the stems at a slant, which helps them draw up water. Remove any leaves that would sit below the waterline, so the water does not turn cloudy so easily.
It is best to keep flowers away from sunny windowsills, heating vents and ripening fruit. In a cool spot with little draught, they stay looking their best for longer.
